I like the 1st idea you posted. I saw a pattern for honeycomb patchwork bag in the Australian 50th edition of Quilters Companion that had it finished with the inside layered under the uneven edges of hexagons to create a smooth edge, like the examples you posted. It looked nice. Unfortunately I couldn't find it online but maybe you will have a better search :) good luck!
