Taste like chicken lol. Snappers get huge and can be pretty hateful. I used to have an old guy that got them out of our creek. It was interesting watching him clean them. I would like to have ducks but can't cause of the turtles. As far as I know snapping turtles are the only ones people usually eat. Beleive me if you ever seen a snapper they are not, nor could ever be pets. If I needed to I could eat turtle, times are hard ,you never know....I think it is good to teach kids survival skills and the many ways in which we can "live off the land"
And yes they will kill your chickens, like I said that is why I can't have ducks. Well At least I don't have a goose problem as they have become overpopulated around here.
