I love to cut the rhubarb up and add some water to cover and cook until rhubarb is soft. Then I add a sweetner, can be sugar or a sugar substitute to taste.
Next, strain the rhubarb out of the juice and discard the rhubarb. Put the juice into ice cube trays and serve cubes of the juice in glasses of gingerale, club soda, etc. It makes a very refreshing summer drink and is pretty pink as well.
