One of the easiest quilts I've ever made was called "Pieces of Eight" found at Creations, Kerrville,TX. It used co-ordinating fabrics, cut into 8" squares, and sewn back together. There were not even any borders! So far,it's the only quilt my 28 yr.old daughter claimed as hers.
If you like scrappy, I 'm sure you could do it that way.
