Make a Quinoa salad!
1/8 C. dry Quinoa per person to 1/4 C. boiling water ( make it like rice) turn to simmer w/lid on 15 mins.
1 bunch parsley chopped kind of fine, I use the stems also.
red bell pepper diced
tomato diced
red onion diced
mint , chopped
radish chopped
olive oil & lemon juice to taste,
kosher salt.
eat with pita, or crackers.
This and some Hummus.... I could eat like this every day!
