See if the Loch Lomond quilt show is on while you're there--it's very near Glasgow and a top show. If you go, you can ask for advice on places to hunt for fabric. There are quilt shops in the most surprising places. And if you really want to hit the quilting jackpot--go to Birmingham's NEC (get a cheap flight from BMI Baby from Glasgow or Edinburgh, walk to the NEC from the airport) and take in the Festival of Quilts. It's the best show in Europe, huge, well organized, lots and LOTS to see and do, quilts from all over the world and fantastic vendors.
