For the HST's I always cut on the in. and then trim. Someone with better math skills could give you better info but I think you'd end up with 1 1/2 in. HST's. I'd cut 2" of both fabs, draw center diagonal lines and sew on each side of the line yielding 2 HST's per. As to the flying geese...I'm at a loss...sorry. I'd have to draw it on paper. Possibly 2 1/2 in. square. Draw on the diagonal and then place on your rectangle and sew ON the diagonal and trim. Do you have some scraps you could check these measurements with? Good luck. It's a very pretty block.
