For the HST's I always cut on the in. and then trim. Someone with better math skills could give you better info but I think you'd end up with 1 1/2 in. HST's. I'd cut 2" of both fabs, draw center diagonal lines and sew on each side of the line yielding 2 HST's per. As to the flying geese...I'm at a loss...sorry. I'd have to draw it on paper. Possibly 2 1/2 in. square. Draw on the diagonal and then place on your rectangle and sew ON the diagonal and trim. Do you have some scraps you could check these measurements with? Good luck.
