I've experienced the same issue with the bulk behind the cathedral window, and had wondered if i could just cut out the back, too. I have been ironing my seams to the side, and maybe ironing them open would have been better - ? Am thinking I might just cut some of the fabric in the back, though; it seemed to work for you.
