I've been quilting for a a very long time and have the bad habit of creating one top (rarely do I quilt one) after another. It's because I love the creative process of picking the pattern, finding the "perfect" fabrics and seeing how it all works. You just have to find what works best for you..... but you'll be happier if you finish one every so often---take it from me!
