I use a recipe from the "Company's Coming" cakes cookbook. It does not use coffee but I am thinking you could use coffee in place of the fruit juice used in it. My understanding of using coffee is to enhance the flavors of the other ingredients, especially chocolate. I usually do not care for fruitcake but wanted to try making it just to see if I could. Even my friends who do not like fruitcake look forward to getting some every Christmas. It is called Festive Fruitcake and it is spectacular. Not cakelike, just enough batter to bind the fruit together and after it cools I wait a few days and wrap it in cheesecloth and pour brandy over it. I wrap it in foil and pour brandy over it several times then freeze it for Christmas. We have one left from a double batch last Christmas.
