Log cabins are just straight stitching and so easy that I would not paper piece. Just watch your seam allowances, cut straight etc. But, maybe you would like PP for miniature logs.
I agree as others suggested; try a block or two each size strip and each method. Then use the method you like best. And, I am thinking you will end up using different methods for the different size strips and blocks.
Have fun, use your extra practice pieces for pot holders, check book covers, etc.
