Change your thinking. It is not a MESS -- it is a WORK IN PROGRESS! If you had walked into the Sistine chapel and seen ladders and scaffolding and paint buckets, would you have said "What a mess!" ;-)
I do find that plastic pans, like dish pans help me to keep each project together, even if I have two or three going at once. I just toss all the stuff for that project into the pan. I found some that are shallower and larger than a dish pan (sort of like a kitty litter size) that allow me to keep finished blocks nice and flat and have room for the unsewn bits also.
