Not sure of what you mean by "reduce the seam allowance". I make all seams, even for binding 1/4". 2" will just give you a bit narrower binding. I usually do 2 1/4" for my binding strips, then fold in half.
When I do my 2 1/2" binding, I use a 3/8" seam allowance so it ends up equal on both sides. So, using a scant 1/4" seam allowance on 2" makes sense. Thanks!
