Ya know, I made some egg salad recently as an experiment...low cholesterol version out of egg whites only. It was pretty good!
I just took a fork and smashed up the egg whites in a bowl. I added a very small amount of Miracle Whip, a little sour cream, mustard, onions, a little pickle juice for some moisture since I was being stingy on the salad dressing...maybe some garlic powder...I think I added relish. I ate it on toast. I didn't really miss the yolks.
