I would stick with the B&W. I have the Accucut Studio winding ways die (it is also available for the GO). I've made a couple of practice blocks, and had a bit of a problem getting them to lay flat. I happened to find the book: "Winding Ways Quilts" by Nancy MacDonald. She has a few cutting and construction tips that really helped a lot. Also some eye candy on different layouts. It's amazing the different ways this block can be layed out! If you can find a copy, I'd recommend it. I got a bunch of batiks for mine but I'm going to use the same light background for all. This quilt is about #4 on my current list... Sigh.
