Meatloaf
2 lbs. burger ( I use half venison, half beef)
1 onion, chopped
1 green pepper, finely chopped
2 jalapeno peppers, chopped
1/3 cup pickle relish
1/2 cup salsa
8-10 saltine crackers, crushed (the little 2" X 2"ones)
2 eggs
1/2 cup milk
1 t. salt
1/2 t. pepper
2 T. spicy mustard
1 T. worcestershire
Topping 1 cup catsup and 6-8 slices bacon
Mix all ingredients except catsup and bacon, place on foil lined cake or cookie pan. Make an indention down the middle and fill with the cup of catsup and lay bacon strips over top. I cut bacon in half, so all of top is covered. Cover and bake 1 hour @ 350. Uncover and bake an additional 45 minutes.If there is grease, drain it off, let meatloaf sit 10 minutes before slicing. I get lots of compliments on this meatloaf. Makes a large loaf.
