Try this in the crock pot:
1 Pork Roast in the crock pot on low for several hours with a little bit of water in the bottom.
Add 1 can sauerkraut the last couple of hours. Fork the meat apart like pulled pork.

My DH hates sauerkraut so I add a chopped up one or two apples and add 1-2 Tbls brown sugar. I tell him it's chopped cabbage and he eats it up and takes seconds. Men are so funny some times.
