That's the way I make it, too, but I drain the liquid out of the hominy can before I fry it. It's really yummy. Do you use the white or the yellow? (I use yellow - I think it's a tiny bit tastier.)

Anyway, tonight I'm having a tuna sandwich on white toast and an ear of corn (steamed 3 min. in the micro), maybe some sliced cukes and green peppers on the side. Watermelon after.
Judging from the weather forecasts, the menus for the next several days will be VERY similar!
