High loft or low loft -- you can tie with both it just depends on the look you want. The only caution is to be sure you read the directions that come with the batting and make sure you follow the directions about how far apart to quilt. I have a friend who tied a quilt with warm & natural batting and the batting did not hold up to a lot of washing because she tied it too far apart.
