I am from Puerto Rico and live in NY. My friend from Spain (Valencia) wanted to make one in my house, and he made my husband go to China Town and look from shrimp with their heads aand eyes still on, and those don't come around here very often (in NYC).

Oh yes, the Prawns (thats what we English call them) make the Paella taste better with their skins on. that surprises me that you donīt get them whole, mind you it is a pain in the neck having to peel them when you want to eat the Paella. Each district has their own take on Paella as well, they put different things in.
