I could NEVER understand the ease all those quilting teachers had in pressing seams on their TV series shows. I thought I had a good (better than basic) iron and I had to come up with my own technique of pressing seams in order not to distort (it did involve water). Well, the better than basic iron died and I had permission to splurge big time on a new one. I purchased the: SharkŪ Ultimate Professional Iron GI568 at Walmart. I paid $50, but have since seen it on-line for as much as $80. One word - wow - now I understand. It presses seams like the proverbial hot knife through butter.
