Found this recipe in the Taste of Home's Southwest Cooking mag. OMG - it's SO good!!! It says 4 servings --- but it gave us 2 large bowls of soup tonight --- and I had it done in less than 15 minutes!!!!!

Bart’s Black Bean soup

4 servings

1 can (15 oz) black beans, rinsed and drained
1 ½ cups chicken broth
¾ cup chunky salsa
½ cup canned whole kernel corn, drained
Dash hot pepper sauce

2 tsp lime juice
1 cup (4 oz) shredded cheddar cheese
2 tbsp chopped green onions

In microwave- safe bowl, combine the first 5 ingredients. Cover and microwave on high for 2 minutes or until heated through. Pour into four serving bowls, drizzle each with lime juice. Sprinkle with cheese and green onions.

NOTE: This was enough for one meal for us….wish we’d had more but if I had, I’d be sick now.
