Canning is super easy, especially if you do high acid canning that only requires a water bath. You just need a big giant kettle for boiling the jars. Many older cook books have chapters on canning, such as the Fanny Farmer Cookbook and the Better Homes and Gardens cookbook. You can find instructions on the internet.

If you get the Ball Blue Book, Guide to Preserving you will get complete instructions and recipes. Also a case of canning jars with lids bought in any walmart has instructions. So does the boxes of pectin you buy for making jams. I did not have anyone teach me to can. I learned from following the directions in the canning jars and in cookbooks. Taught myself around 20 years ago and in all that time I have only had a few jars not seal properly or break in the canning process. I have never done pressure canning, only water bath.
