Here is a article about making fabrics, to help you understand (a little).

Now, I am not saying that everyone should shop 'only' at LQS. Funds play a big part in what one can afford, and even convenience/location play into that decision.
IMHO if you are thinking of doing hand applique, I would go with the batiks. They fray the least when doing applique (my avatar is batik and reversed appliqued).
good luck on your project(s)
years of working in the textile industry and even being a buyer for a big chain store, you really LEARN about fabric and the differences...I am a fabric snob...when I need to be...I will not use the BEST fabric for blocks swaps, only because, I know I won't be getting the BEST back! I do not use the BEST fabrics for donation quilts, only because they often do not end up where you want them to! I do not use the BEST fabrics for garments, wall hanging, home decor items, simply because as time goes on, tastes/styles change, so the decor & clothing changes!
having said that, I am making myself a jacket with silks that are the BEST I could find! Might have to do a matching Hand bag as well!
