Since a lot of us are at the point of too many zucchini, I thought I would share a couple of recipes. My co-worker found both of these on Allrecipes.com . Both are good. Enjoy. :)

Zucchini Brownies

1/2 C. veg oil
1 1/2 C. white sugar
2 tsp. vanilla
2 C. flour
1/2 C. cocoa pwdr
1 tsp salt
2 C. shredded zucchini
1/2 C. chopped nuts (walnuts, or pecans)

Mix oil, sugar and vanilla until well blended. Combine flour, cocoa, B.S., and salt. Add to the oil mixture. (Mixture will be fairly dry). Add zucchini and nuts. Spread in a greased and floured 9X13 pan.
Bake @ 350°F for 25 to 30 minutes.

Can be iced, but really doesn't need it.


Zucchini Crisp

8 C. cubed, peeled zucchini
1/2 C lemon juice
1/2 C sugar
2 tsp. ground cinnamon
1 tsp. ground nutmeg

Topping:
1 1/3 C. br. sugar
1 C. old fashioned oats
1 C. Flour
2/3 C butter or marg.

In a bowl, combine zucchini, juice, sugar, spices, and mix well. Pour into a 9X13 baking dish.

For topping, combine all ingred. and cut in butter/marg with pastry cutter until crumbly. Sprinkle over zucchini mixture.

Bake @ 375°F for 45 to 50 minutes or until bubbly and zucchini is tender.
