I love fried zucchini. I use smaller zucchini though. I peel the zucchini, slice it in small thin pieces (like you would a tomato), then I beat a couple of eggs and dip the zucchini in that, then I dip that in flour that has been seasoned with salt & pepper,or I also use onion ring batter, both are sumptious, then fry the slices in hot olive oil, until browned on each side, and serve. It only takes a couple of medium size zucchinis to make a large plate to serve a family of four. All of my family love it. I like fried green tomatoes done the same way, but they aren't as good as the zucchini to me.
What a neat idea to give that to the soup kitchen. I am sure they will be most appreciative of the gift. A good way to pay forward.
