I see some more ideas came while I made and ate supper!
While the chicken baked, I also did two batches of cookies, baking one tray at a time .... and continued the marathon after supper.
So .... I had some bread that I was planning to crumb and have in the freezing for stuffing. It became fine crumbs. Mixed in some spices/herbs/salt/pepper. Breaded the chicken and baked with foil on top.
Nothing too exceptional ... though til it was suggested, it was probably the furthest from my mind for possibilities!
Cooked some rice. Frozen peas. And some homemade cranberry sauce. Delightful supper .... with a warm cookie for dessert! :0)
And now .... lots of chicken leftovers for the next few days and the freezer!
