i don't know why anyone would talk you out of backing a quilt with minkee- it makes wonderful backs- and quilts beautifully!
on the other hand- it sheds like crazy when you cut it-so when you cut it for piecing have a roll of masking tape handy to help clean up the mess- and maybe take it outside and give it a good shake- before trying to sew- and don't panic- it's normal for it to shed like it does on the cut edges. i've seen some wonderful quilts using squares of minkee- flannels- chenelles- and used for appliques
but it is going to shed when you cut it
