Don't see why you couldn't but I would make one row of 2 instead of two rows of one. It won't be as easy as a straight edge but is as doable as the corners of a lone star quilt.
OR you could rip a few stitches on the horizontal seams add your extra blocks then sew to combine as if you had run out of thread on each row.
