HillBilly Housewife has some meal plans/ideas that I've used before - or at least gives me ideas on tweaking what's already in my pantry.

http://budgetbytes.blogspot.com/ - she has a salsa poached eggs recipe, (which is great,we add nopales to ours, though). And you don't have to use canned tomatoes, which I never have. Just roast them under the broiler for a few minutes.
My mom would always stretch out the Bean & Bacon soup by adding lots of potatoes, carrots, a lb. of kielbasa and sometimes another can of navy beans.
My local dollar store sells a large can of Hominy for well, a dollar. I usually make a strong chicken broth (lots of garlic and onion, bay leaves) shred the chix, and then simmer the corn until it's tender. The punch comes from the condiments:lemon/lime, dried oregano, hot sauce, or even sardines in a spicy tomato sauce, etc.
Maybe croquets made with canned salmon or tuna mixed with potatoes, a salad, some bread.
