Any advise?
I usually make log cabin quilts from my scraps, so I cut them into 1.5" strips and separate into lights and darks. (Some of the mediums wind up in both groups.) Eventually I go through the 1.5" strips and cut them into the lengths for a log cabin block (1.5", 2.5", 3.5"...9.5"). These get stored in silverware dividers that I got at Wal-Mart. When I'm ready to start the quilt, I just pull out the pre-cut pieces and start sewing. I don't try to control what fabric goes next to another, except by value.
