pumpkin dip, served up in a little pumpkin, with ginger snaps to dip in it. my daughter was hollering suggestions to go with it, yesterday--graham crackers, animal crackers, apple slices, pear slices--they were the ideas she came up with. it's easy, and i made it with zero fat cream cheese, so it wasn't as guilt producing as it might have been...
(easy= one can of canned pumpkin--not pre-spiced, one 8 oz block of cream cheese, about 1 tsp cinnamon, 1/3-1/2 cup brown sugar (depending on how sweet your sweet tooth is), and about 3 TBSP maple sugar. beat the socks off of it, with hand blender or mixer, adjust the cinnamon, and serve it up. delicious, easy. credit goes elsewhere for the recipe--can't recall the source)
