With an unlimited budget ... I would get a great sewing cabinet , one where my machine bed is level with the cabinet surface, one with drop down extentions.
Whats the one thing I could not give up.... great lighting. Nothing makes me more crazy than to have shadows in my work space. When I had my space modified to be a sewing room the workman thought I was nuts when it came to lighting. I wanted the ability to have it bright as daylight .. if it was midnight.
