In garments, I always clip and notch curves.

In quilts, I try not to ever clip or notch. The seam allowances in a Drunkard's Path will usually lie flat after you press the block.

In applique, if the piece isn't starched into submission before I sew it down, I can usually pick and nudge at the turned edge and get it to lie down, but I do occasionally resort to clipping.
