Barb, by any chance did your second quilt shown come from a book "Spectacular Scraps" by Judy Hooworth and Margaret Rolfe? It is a book I really love. It has a ton of patterns, all of which only use HST's. The patterns are developed by your choice of fabrics, and by the placement of darks and lights. As soon as I saw it, I thought of this book. Anyway, both are beautiful, and they do show how pretty quilts can be just using HST's.
