I usually use a nice neutral...either an cream/tan or a medium to light grey. I have found if you match thread, it will disappear. So if you have some fabrics that match the thread and some that do not, you will see your quilting on some of the fabrics and then it disappears. My solution is to make sure the thread contrast with EVERYTHING, but does not POP. Hope this helps!
