Peanut Butter Balls
2 cups smooth peanut butter
1 ½ sticks softened butter
2 pounds powdered sugar (4 cups)
3 cups Rice Krispies
1 pound chocolate almond bark

Blend together both butters, make every attempt to not melt the butter. In a large bowl bring together the powdered sugar and Rick Krispies. Bring both mixtures together. Starting with a strong spoon is good, but usually switching to your hands is best. Work the mixture into small balls about the size of a nickel/quarter. Roll the balls making them as smooth as possible. Refrigerator for an hour or place in the for 30 minutes to firm. Melt the chocolate almond bark in a double boiler and using a toothpick /spoon dip each peanut butter ball. Place on a parchment covered pan until they are set. Store in a cool dry place.
Microwaves are great for melting chocolate, but you’ll find that you have to reheat to keep the chocolate thinned out. The double boiler is truly a better move
Yields about 60 peanut butter balls
