FANTASY FUDGE
¾ c. margarine 1 (7 oz) jar marshmallow crème
3 c. sugar 1 c. chopped nuts
1 (5 oz) can evaporated milk 1 tsp. vanilla
1 (12 oz ) pkg. semi sweet chocolate chips
Microwave margarine in 4 qt bowl on high 1 min or until margarine is melted.
Add sugar & milk; mix well. Microwave on high 5 minutes (stir after 3 min.) until mixture begins to boil. Mix well, scrape bowl.
Microwave 5 ½ min. (stir after 3 min)
Stir in chocolate chips until melted.
Add marshmallow crème, nuts and vanilla, mix well.
Pour into buttered 13 x 9 inch pan. Cool at room temp. Cut into squares.
Yield: 3 pounds.
For peanut butter fudge substitute 1 cup peanut butter for the chocolate chips.
12/18/09 mistakenly put in whole 18 oz jar of crunchy peanut butter & it was the best fudge!! No problems setting up either.
Dec 2011- Used peanut butter chips in place of peanut butter & worked great
This is exactly what I was getting ready to say. This is the best recipe ever, but I don't like the peanut butter chips. I always use crunchy peanut butter. Make sure you have a candy thermometer. I've been wanting peanut butter fudge for several days so tonight I decided to make it. I was cleaning the kitchen after dinner and put the milk, butter and sugar on the stove and about the time it was getting to the soft ball stage, I got a phone call from my son in Florida and I no more than turned around to pick up the phone and back to the candy and it was scorching . So tomorrow, I'll try to make it again. I was lucky to get the pan cleaned up after a good soaking and reheating.
Oh well, it happens to the best of us.

Merry Christmas everyone.
