Just made gluten free cookies today. I buy corn flour at the bulk food store. I use a regular Peanut Butter cookie recipe and substitute the corn flour for reg. flour. You have to fiddle with the recipe a bit and add a little more flour so it can be rolled into balls and pressed down with a fork before baking. Corn flour makes the cookies a little grainier than reg. flour but they are still good. (make sure to check your peanut butter is gluten free before using)
