i've backed many many quilts with fleece and minkee---it is a personal choice whether or not to use batting- some people like heavy-warm quilts-some people like them a little lighter weight-
the fleece is pretty warm.
i've done both ways---i like them with batting myself-
you said-back, batt, binding---you do still need to quilt it before binding-
fleece quilts beautifully...but does have some stretch=it is important to smooth it without stretching it....or your quilt will become (wonky)
if you do not use batting you can just tie your quilt instead of quilting it- personally i like them quilted-they just quilt beautifully- the fleece really *enhances* the quilting design.
