I have a simple french toast recipe. The night before assemble and store in frig.

1 cup 1/2 N 1/2 low fat
3 eggs
1 1/2 tsp vanilla
cinnamon
any kind of semi dried bread, about 4 to 6 slices, cut into 1 inch cubes

Use a 8X8 or 9X9 square glass pyrex pan and spray heavily with Pam

Cut up enought bread to fill pan 1/2 way and sprinkle cinnamon on top.
Mix all wet ingredients well and gently pour over top of bread. Try to get all the bread wet.
Cover with plastic wrap and let sit overnite in frig.
In morning, take plastic wrap off and cover with tin foil. Place in cold oven.
Turn oven to 350 degrees and bake 30 minutes. Take tin foil off top and bake another 20 minutes.
Serve with powdered sugar on top or plain with syrup.

You can change the flavor by adding a tablespoon of maple syrup instead of vanilla.
