Try quiche. I use store-bought pie crusts. These can be baked the night before and reheated or just assembled quickly in the morning -- cook the bacon ahead of time. I have two favorites from the Kraft foods website. Even the guys in my family like these! This year I'm making them with Egg Beaters to cut some cholesterol, since the weekend will be filled with lots of rich food I'm trying to cut fat or sugar where I can without sacrificing taste. Serve with fruit salad and refrigerator bran muffins (batter is made ahead, stored in fridge, just pop into muffin tins that morning, or bake the night before and reheat; I make the muffins with unsweetened applesauce replacing the oil).
