I get creative too. The last meatloaf I made I did Italian style, with some pasta sauce on top and more Italian spices (ie Italian bread crumbs, ground beef and more basil).

When it was half gone, I cooked lasagna noodles, mixed up a batch of filling with the ricotta and mozzarella cheeses, and just laid a slice of meatloaf on half a noodle, slapped the filling and some cooked spinach and mushrooms in there, folded the noodle over the top and tucked it in. Sauce and parmesan on top, baked for half an hour, and I had individual lasagna servings!

It was a big hit at my Gramma's 88th birthday and no one knew they were made from leftover meatloaf. LOL
