The Betty Crocker website has a great recipe for spinach cheese balls. They are delicious! Make a big batch and you can keep them frozen until you need them. Then you just take out and heat however many you need.
I've also made little kabobs with cubes of cheese, ham, salami, olives and or pickle slices. Very popular.
