Raised in the mid-west, we do our black-eyed peas and spinach greens. I cheat a bit, I boil the dry black-edyed peas in chicken broth. I boil the water, vinegar (cup of each) and cup of sugar til its a rolling boil. Shut off the heat and I put 4 packages of baby spinach in to wilt. Then we can eat it with a smile 'cause its good.
