How funny you should ask.... I just tried a recipe from Pillsbury, and it was the best chicken pot pie I've ever made! You can find it here:

It does use "convenience" foods so if you're looking for something totally made from scratch, this won't be it! But it's really, really delicious.
By the way, I used a store-bought Rotisserie chicken... just cut up half of it and threw it in the pie... easy peasy!
