I have used this method in the past when using cuddle fleece and it works well. I have done SID on machine rather than tie it though. Also, I sew around the outside edge (after it has been birthed and the opening has been hand sewn shut) about 1/2 inch from the edge just to give it a bit of a faux binding look - it also keeps those edges nice and tidy so there is no shifting.
