I am a firm believer in classses that stress the basics along with a project that will be easy to finish.
There may be too many classes where students may finish one or two blocks and because the technique is too involved will never finish it.
Classes that inspire the student to go further.
I had good response recently with a class in old fashioned string piecing.
My binding class is always full as is hand and machine quilting.
