I asked for bread recipes a couple of months ago. I got several really great suggestions here:

As for flour, I have substituted unbleached/whole wheat/bread flour in just about every recipe I've ever made. The only thing I have noticed is that I have to use more bread flour to balance out whole wheat if I want it to rise properly (I tried half and half flour and found that 1/3 whole wheat to 2/3 bread flour rises much better). Otherwise, I think you can use whatever flour you like.
