I think Candace makes a valid point about the chewing, and therefore I agree with you on binding the edges and using 1/2" seam. Most kids like touchy feelly things and I think the inner fraying would be great for them. Also most kids that still chew, chew on the edges of things; blankets, hems, collars, etc.
